Ingredients
  

  • 1/2 Pound Pancetta Diced Small
  • 3/4 Cup Sweet Onions Diced Small
  • 2 Tablespoons Dijon Mustard
  • 1- 1/2 Cups Apple Cider Vinegar
  • 1- 1/2 Cups Red Wine Vinegar
  • 2 Cups brown sugar
  • 1/4 Cup Olive Oil
  • 1 Cup Vegetable Oil

Instructions
 

  • In a large saute pan, cook the pancetta on medium heat, stirring occasionally, until it starts to brown, this should take about 15 min. Keep the rendered fat in the pan.
  • Add the onions, cook for 5 minutes and then add the mustard.
  • Add both vinegars to the mix (The vinegar aroma will be very strong) reduce the vinegars for 8 minutes or until the liquid is reduced by 1/2.
  • Reduce the heat to low, add the brown sugar to the pan and stir until all the sugar is dissolved.
  • Slowly whisk the oils into the pancetta mix.
  • Serve warm.

  • 1/4 Cup Rice Wine Vinegar
  • 1 teaspoon Five – Spice

  • 2 teaspoons Sriracha (Optional)

Instructions
 

  • In a large mixing bowl, whisk all the ingredients together.
  • Put into a airtight container and refrigerate.

Notes

It is a great marinate for vegetables, seafood and chicken.

Instructions
 

  • Put All The Ingredients Into A Blender; Except The Oil.
  • Blend For 2 Minutes Or Until The Mixture Is Smooth.
  • Remove The Lid And Scrape Down The Sides Of The Blender With A Rubber Spatula.
  • Remove The Cap On The Blender Lid And Slowly Pour The Oil Into The Blender, With The Blender Running On Low.
  • Once The Dressing Begins To Thicken, Stop Blending.
  • To Store The Dressing, Put Into A Air Tight Container.
  • The Dressing Can Be Refrigerated For 1 Week.
