  • 2 Tablespoons Lime Juice
  • 1 teaspoon Red Pepper Flakes
  • 2 teaspoon Chili Powder
  • 2 teaspoon Paprika
  • 1 teaspoon Cumin
  • 5 Tablespoons Rice Vinegar
  • 1 Tablespoon Sugar
  • 1/2 Cup Olive Oil
  • 2 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 Cups Jicama Peeled & Julienned
  • 1/2 Cup Carrots Peeled & Julienned
  • 1 Cup Napa cabbage Shredded Fine
  • 1/4 Cup Red Onions Thinly Sliced
  • 1 Each English Cucumber Peeled & Julienned
  • 1 Each Red Bell Pepper Seeded & Julienned
  • 2 Tablespoons Cilantro Chopped Fine

Instructions
 

  • In a large mixing bowl whisk the lime juice, spices, vinegar, sugar & olive oil together. Season with salt & pepper.
  • In a large mixing bowl combine all the vegetables together.
  • Combine the lime mixture with the vegetables & toss well.
  • Refrigerate for at least 4 hours.

Notes

You can make this salad a day before you are ready to serve it.

  • 1 - 1/2 Cups Kalamata Olives Pitted
  • 1/3 Cup Olive Oil
  • 1/2 Tablespoon Lemon Juice
  • 1/4 teaspoon Lemon Zest
  • 1 Tablespoon Capers Drained
  • 2 Each Garlic Cloves
  • 1 Each Anchovy Fillets
  • 1 teaspoon Fresh Thyme
  • 1/2 teaspoon Pepper

Instructions
 

  • Put All The Ingredients Into a food processor.
  • Pulse the mixture twice for 20 seconds after each time scrape down the sides. The mixture should have rough texture to it.
  • Store in a airtight container in the refrigerator.

Ingredients
  

  • 1/2 Pound Pancetta Diced Small
  • 3/4 Cup Sweet Onions Diced Small
  • 2 Tablespoons Dijon Mustard
  • 1- 1/2 Cups Apple Cider Vinegar
  • 1- 1/2 Cups Red Wine Vinegar
  • 2 Cups brown sugar
  • 1/4 Cup Olive Oil
  • 1 Cup Vegetable Oil

Instructions
 

  • In a large saute pan, cook the pancetta on medium heat, stirring occasionally, until it starts to brown, this should take about 15 min. Keep the rendered fat in the pan.
  • Add the onions, cook for 5 minutes and then add the mustard.
  • Add both vinegars to the mix (The vinegar aroma will be very strong) reduce the vinegars for 8 minutes or until the liquid is reduced by 1/2.
  • Reduce the heat to low, add the brown sugar to the pan and stir until all the sugar is dissolved.
  • Slowly whisk the oils into the pancetta mix.
  • Serve warm.

  • Rinse The Quinoa In Cold Water, For About 5 Minutes And Drain Using A Fine Mesh Strainer.
  • In A 4qt Sauce Pan add The Quinoa & 4 Cups Of Water. Bring To A boil, cover, then reduce to a simmer for 7 minutes Or Until Grains Are Soft. Do Not Overcook.
  • Immediately Put The Quinoa Back Into The Sieve And Run Cold Water Over It For 5 Minutes Or Until It Is Completely Cooled.
  • Put The Quinoa Into A Large Bowl And Mix It With All The Vegetables.
  • In A Small Mixing Bowl, Whisk Together The Oil, Vinegar, Curry Powder, Chili Flakes And Ginger And Set It Aside.
  • Add The Oil And Vinegar To The Quinoa Mixture And Mix.

Notes

I Suggest Making This Salad A Day In Advance.  It Will Give The Flavors A Chance To Infuse Together.

  • Put the remaining ingredients into a large mixing bowl. Whisk until smooth, then fold in the roasted garlic.

  • 2 Cups Cauliflower Rice
  • 1/4 Cup Fresh Or Frozen Green Peas
  • 1/4 Cup Cashews Rough Chopped Or Pieces
  • 2 Tablespoons Fresh Thai Basil Chopped Fine
  • Salt To Taste
  • Cilantro Sprig To Garnish

Instructions
 

  • In a large saute pan or wok, on high heat add 2 Tablespoons of the oil. Once the oil is hot stir in the peppers and onions. Cook for about 3 minutes, or until the vegetables are soft.
  • Add in the garlic, ginger and Thai chili stirring for 1 minute. Remove the vegetables and set aside in a bowl.
  • Add the sesame oil and pineapple. stirring constantly for 3 minutes or until there is no liquid in the pan. Add to the bowl of
  • vegetables.
  • In a small mixing bowl crack the eggs and whisk for 1 minute, add 1 Tablespoon of oil to the pan or wok and add the eggs. Stir the entire time they are cooking, which, will be very fast. Take the eggs out and put in a separate bowl.
  • Add the remainder of the oil and the Cauliflower rice, cook for 2 minutes stirring constantly to break apart any chunks.
  • Reduce the heat to low and stir in the soy sauce and pineapple juice, add the vegetables and pineapple back into the pan.
  • Stir in the peas, green onions, basil and cashews. Salt to taste.
  • Garnish With A cilantro Sprig. Serve immediately.

Notes

This is a very healthy entree by itself but if you would like to add some protein chicken or shrimp pair perfectly with it.
