Ingredients
  

  • 3 Tablespoons Canola Or Peanut Oil
  • 3 Tablespoons Red Bell Pepper Diced Small
  • 2 Tablespoons Red Onion Diced Small
  • 1 Each Thai Red Chili Pepper Finely Chopped
  • 1 teaspoon Minced Garlic
  • 2 teaspoon Ginger Paste Or Fresh Ginger Minced
  • 2 teaspoons Sesame Oil
  • 2 Each Large Eggs Whisked Together
  • ½ Cup Pineapple Fresh Or Canned Diced Small If You Use Canned Pineapple Drain Off All The Liquid.
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Pineapple Juice
  • 2 Tablespoons Green Onions Chopped Fine
  • 2 Cups Cauliflower Rice
  • 1/4 Cup Fresh Or Frozen Green Peas
  • 1/4 Cup Cashews Rough Chopped Or Pieces
  • 2 Tablespoons Fresh Thai Basil Chopped Fine
  • Salt To Taste
  • Cilantro Sprig To Garnish

Instructions
 

  • In a large saute pan or wok, on high heat add 2 Tablespoons of the oil. Once the oil is hot stir in the peppers and onions. Cook for about 3 minutes, or until the vegetables are soft.
  • Add in the garlic, ginger and Thai chili stirring for 1 minute. Remove the vegetables and set aside in a bowl.
  • Add the sesame oil and pineapple. stirring constantly for 3 minutes or until there is no liquid in the pan. Add to the bowl of
  • vegetables.
  • In a small mixing bowl crack the eggs and whisk for 1 minute, add 1 Tablespoon of oil to the pan or wok and add the eggs. Stir the entire time they are cooking, which, will be very fast. Take the eggs out and put in a separate bowl.
  • Add the remainder of the oil and the Cauliflower rice, cook for 2 minutes stirring constantly to break apart any chunks.
  • Reduce the heat to low and stir in the soy sauce and pineapple juice, add the vegetables and pineapple back into the pan.
  • Stir in the peas, green onions, basil and cashews. Salt to taste.
  • Garnish With A cilantro Sprig. Serve immediately.

Notes

This is a very healthy entree by itself but if you would like to add some protein chicken or shrimp pair perfectly with it.

Ingredients
  

  • 2 Cups Fresh Or Frozen Corn
  • 2 Tablespoons Jalapeno Seeded & Finely Chopped
  • 1/4 Cup Green Onions Thinly Sliced
  • 2 Each Large Eggs
  • 1/2 Cup Buttermilk
  • ½ Cup Shredded Cheddar Cheese
  • 2 Tablespoon Olive Oil Plus Extra For Cooking
  • ½ Cup All Purpose Flour
  • ½ Cup Yellow Cornmeal
  • ½ teaspoon Salt
  • ½ teaspoon Pepper

Instructions
 

  • Pulse 1 Cup Of The Corn In A Food Processor Until Pureed, Just A Few Seconds.
  • Mix the Corn, Eggs And Buttermilk Into A Large Bowl.
  • Mix The Dry Ingredients Into A large Bowl.
  • Add The Chopped Corn Mixture To The Dry Ingredients And Stir Gently To Combine. The Mixture, Should Be Somewhat Thick. If The Mixture Is Runny, Add A LITTLE Flour. If The Mixture Is To Dry, Add A LITTLE Buttermilk.
  • Heat A Large Non-Stick Saute Pan Or Griddle Over Medium-High Heat, Add Just enough Olive Oil To Lightly Coat The Pan Or Griddle.
  • Using A 1/4 Cup Measuring Cup, Pour The Batter Onto The Griddle. Allow Enough Space In The Pan Or On The Griddle For The Batter To Spread Out Evenly Without Overlapping.
  • Cook The Cakes, Until Golden Brown, About 2 Minutes On Each Side.
  • Remove The Cakes From The Pan Or Griddle And Place On A Sheet Pan. Do Not Stack While Hot.

Notes

The Wet & Dry Ingredients Should Not Be Mixed Together Until You Are Ready To Cook Them. 
The Corn Cakes Can Be Served Either Hot Or Cold.
